I have done a variety of more basic models now such as a dog, the sword and the monkey but I want to go on further and make slightly harder models. Which ones would people recommend and where can I find the tutorials for them on balloon chat?

Have a look through the reviews section and pick the designs you like.  There is a good range of single PDFs for a few dollars to sets of DVDs.

is there some where i can use big round balloons in aswell because i really want to mix things up?

I am sure Darren aka nifty99 did a review on downloadable  designs with jumbo rounds
